I was forced to create a new cheesecake, and this is what I came up with. There was no fresh fruit begging to become cheesecake topping, and my other flavors were becoming too repetative, so I searched my brain for something fun and different. My customers are a fantastic bunch overall because they keep me on my toes constantly looking for new things to try. I never know if they actually enjoy one of my new creations until about the second week because they’ll buy up every last bite just to give it a taste. On the fly, I simply poured a creamy caramel sauce over cheesecake. A little too much, though, at first it just ran down the sides and made a mess of my table, but I’ll get it right next time.
