One of our long time co-workers, 10 years to be specific, decided to move back home to Mexico. She will be greatly missed. In her honor I not only came up with a new cheesecake flavor, but also personalized it for her.
This is a blueberry cheesecake, a New York style cheesecake covered in all natural super chunky blueberry preserves. Here’s a close-up of the decor.
I don’t think I will ever have enough time in my schedule to make the center image of the flag of Mexico. I’ve come to realize that many people think I do my detailed chocolate work with a food color printer on edible paper….but I don’t. I do them by hand with often times a toothpick and tons of skill. Each color needs to be tempered properly, and colors have to be layered just right. I haven’t personally met anyone with the same unusual skill, but I’d like too, because I’d like to learn more.
