The new fad this year: ruffles. Here is my first attempt for a last minute wedding cake.There are many different versions of this concept, and I think each of them look fantastic when used appropriately. I admit the first attempt of putting on the ruffles didn’t work out very well, but luckily it was just cream cheese icing, so I simply iced it flat, and tried again. The final product came out exactly the way I had pictured it and, more importantly, just like the image I had emailed to the bride. She had her own flowers to add on at the wedding, so I’m very curious to know how it looked on display.
I would love to add on more decor to a cake just like this. It doesn’t need much more to make it super chic and classy. There is also a fondant version I’m dying to try, but alas, I have to wait for the right occasion and/or someone to order it. This is a cream cheese iced cake with a faux bottom tier. I’ve never iced a faux cake in real icing before, but I really like the simplicity of it. I’ll probably use this technique from here on out for real cake/faux cake combos.
