After many years of sculpted cakes, I’m surprised no one has ordered one of these from me before. A co-worker of mine needed a cake to impress his family at an important 2nd birthday. Originally he got me excited over the idea of a Teenage Mutant Ninja Turtle cake, but sadly the mother was less enthusiastic about the idea, so Mickey Mouse was the runner up idea that she okayed.
I made him out of 3 different types of cake, which proved to be a little tricky. His left ear is a chocolate custard cake, his right is a german chocolate cake, and the face is a cream cheese frosted Fruit and Cream. All the detail work is made from ganache, and the colored sections are cream cheese icing. Finding a cake board to fit this extra large cake also proved to be a bit of a challenge until I gave in and made my own. Sadly, I can’t do this one for customers because the image is copy-written, but it was still a lot of fun to make.
