I’ll spare you the backstory on this cake, but it was very last minute, and I’m really happy I was able to put it together for them. Many people come to me trying to get last minute wedding cakes. The most common story I get is “My friend was going to make it, but they pulled out at the last minute because they didn’t have time.” Your cake decorator doesn’t want to hear that. Wedding cakes require special parts and most bakeries don’t keep every single size and color of board, divider plate, and gumpaste flower on hand. We aren’t prepared for your one-of-a-kind moment at the drop of a hat. Not to mention, you’re probably not the only person getting a special cake on the day you picked out. However, this moment was not one of those moments. They needed a cake fast, and after hearing their story, I couldn’t say no.
It’s very nerve-racking to make a cake without a consult and never meeting the people it’s intended for. I was told light blue and navy blue flowers on a white cake with lemon on the inside. We were forced to use our standard sizes of cake since there was no time to put in an order for the bakers. The top tier is cut down from a 7″ round. I also ran out of separating boards, so I had to cut both down from 8″ rounds. I’m actually really honored that I got the chance to make this cake, but I think it’s important to note why cake decorators hate making last minute wedding cakes, and asking us to do so should not be a simple task. Just some food for thought.
